Pineapple Rum Daiquiri

With the rise of the craft rum movement, there are so many awesome rums to mess around with. For this Daiquiri cocktail recipe, I used Stiggins' Fancy Plantation Pineapple Rum. Rich, refreshing and comforting, subtle but with a lot of complexity.

It's loaded with tropical flavors: banana, lime & pineapple, along with comforting notes of clove and brown sugar. But it's beauty—its the subtle complexity.⁠

1.5 oz Plantation Pineapple Rum
.75 oz demerara syrup blend
.75 oz fresh lime juice

1 pineapple leaf

Edible gold spray

Assembly

  1. Spray pineapple leaf with spray. Set aside to let dry.
  2. Add rum, syrup and lime juice into shaker.
  3. Add ice.
  4. Shake.
  5. Strain into coupe.
  6. Add pineapple leaf.
